A delicious way to use up that slightly overgrown zucchini. Lemon and poppy seed is such an irresistible combination.
Lemon Poppy Seed Zucchini Bread
Combine in a large bowl:
4 cups flour
1 1/2 cups sugar
1 small package lemon pudding mix
1 1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
Whisk together in another bowl:
4 eggs
1 1/4 cups milk
1 cup Canola oil
3 Tbs lemon juice
1 tsp lemon extract
Add the dry ingredients to the milk and oil mixture. Only stir until moistened. Gently mix in:
2 cups shredded zucchini
1/4 cup of poppy seeds
2 tsp grated lemon peel
Bake at 350 degrees for 50-55 minutes in any size loaf pan.
